Leprechaun Cakes {St. Patrick's Day}

 

Last year we made these green ombre leprechaun-sized cakes for St. Patty's Day.  They were a big hit at our house.  The tiny slices of cake were so fun to eat, and my daughter and I really enjoyed the process of making these together.  And she enjoyed dumping the food coloring into the batter (Bad idea.  Notice how GREEN the top layer is? She insisted that there was not enough to turn it green.  It's practically neon), and dumping and entire bottle of sprinkles on the finished product.  I used up some of the leftover custom-dyed crystals for mine, and she used nearly the entire bottle of green sugar crystals.


I'm not quite sure if I'm up for something this labor intensive this year.  We might use our favorite go-to White Almond Sour Cream recipe and make cupcakes (we'll do different hues of green, but we'll just pour the colors on top of one another to make a lazy, layered cupcake), and then use Stacey's paper shamrock idea and make mini ones for cupcake toppers.
